Wow, I can still cook


I had pulled my last piece of burmese tofu (tofu made from chickpeas - more on this in future post) from the freezer. I think I pressed out too much liquid, because it started to fall apart. So I decided to give it a little texture boost by coating it in an almond meal/rice milk/spices coating (garlic, salt, pepper, paprika and a little tomato puree) and pan fry it. It's not as healthy as baking it, but it sure is yummy. I will try not to press out so much moisture next time (or at least that's what I'm telling you).


See those beautiful potatos? That is the delicious "Lemony Roasted Potatos" from Veganomicon. I've never made these before. How, oh how, have I missed them? They will soon become a staple in my house. They took a bit longer for me than the recipe said, but they were not difficult and well worth the wait.

Slacker

When it comes to blogging, that is exactly what I've been. But recently I've gotten some new posters and that has inspired me to turn over a new leaf and get back to it. I cooked (and photographed) a lovely dinner last night and left something in the crockpot this morning that looked promising. So, I'm going to try, try, try to be current again.

Food Happiness in a Box

I was at Trader Joe's on Saturday with my mom. We were getting ready to check out and there was a big display of boxes of organic brown rice marshmallow treats. My mom showed them to me and I, missing the V on the front of the box, responded, "I'm sure they have gelatin in them. Marshmallow is made of gelatin." Fully expecting the usual disappointment, I looked at the ingredients. No gelatin. No gluten. No soy. These were vegan and void of any of my allergens :-) I had one yesterday and though they don't taste exactly like the homemade rice krispy treats, they certainly are a great alternative. Yay! Oh, wait, if any of my family is reading this...no I don't have a box of rice marshmallow treats in the pantry. There's nothing in there but beans and rice.
